Edo Kaijo – A Popular Brew Made Exclusively with Aiyama Rice

Edo Kaijo brewed with Aiyama, a rare and highly sought-after sake rice. Aiyama is often called the “thoroughbred” of sake rice, as it descends from two of the finest varieties: Yamada Nishiki and Omachi. This exceptional sake opens with a burst of fruity aroma, followed by a subtle bitterness that lends it a refined, mature character—an elegant expression of craftsmanship and balance.
