Brewed with Eco-Friendly, Polished-But-Unwashed Rice for a Sustainable Future

Toji Terasawa’s introduction of a no-wash brewing method marks a groundbreaking shift in sake production. By eliminating the traditional rice-washing process—an essential step in conventional brewing—this method significantly reduces both water usage and the discharge of togi-jiru (rice-washing water). In fact, it cuts water consumption to just one-tenth of the usual amount, making it an environmentally conscious approach to sake making.

Tokyo Port Brewery, established in 2011 in Shiba, Minato-ku, marks the revival of a craft sake brewery in central Tokyo after more than 50 years. Located near Tokyo Tower, the brewery features an on-site restaurant where guests can enjoy freshly brewed sake paired with seasonal cuisine. Specializing in small-batch production, it emphasizes freshness and aroma in its junmai and limited-edition sake, crafted by blending tradition with modern techniques.
