Haku” is derived from the underground water taken from the Hakusan subterranean water vein and used as brewing water. “Gaku” is from the Togo area of Fukui Prefecture, which faces the mountains (“sangaku” in Japanese) and where the brewing takes place. The character for the “Sen” part is a combination of the kanji meaning “person” and “mountain”, and implies the wish that mountains of people will gather.

We have carefully blended several types of sake with different polishing ratios to achieve a perfect balance of aroma, umami, and crispness. Please enjoy this exquisite creation.

The present family head, Takeshi Yasumoto, became the chief brewer in 2001, and fundamentally reviewed sake brewing techniques, including the selection of raw ingredients, polishing, malted rice, yeast, and management of unrefined sake, maturation, bottling, storage and delivery.
